I hate this! It doesn't matter what I do. Smaller deck with lots of spell removal/prevention almost NEVER works because I keep getting crappy hands with her! I guess I should use Balance, because she almost ALWAYS gets both the village and fighting spirit on the first turn to get a crapload of Amazons on the field who keep coming back to eff me up! Why the hell is she so much harder than the other LDS!? I'm sorry, but I just needed to rant.
Red-Eyes + Cards of Red Stone + Crystal Seer + Skelengel for draw power, Mai will always have 3 monsters if you don't attack any so special summon fiend megacyber last turn, sacrifice labyrinth wall to ritual summon Cu Chulainn, remove a red eyes from play to get its attack to 2900, then perform the Gravekeeper's Vassal combo to get up to 10.8k attack.
100% win rate will get you 7k every duel with glossies/prismatics.
For some reason, I feel like I hardly ever get green keys to challenge her these days, and I don't want to use the card trader for them too much. Does anyone know a good way to get more green keys, or is it just random?
I honestly believe that she is the hardest LD to beat. I usually have to cram more spell/trap removal into my deck just to start winning. Worse than Kaiba, because I'm not just worrying about one card, but all of those annoying Amazoness things like willpower and that stupid village! And it is taking forever to get some of her cards! Die, Mai!
I'm too stubborn to use any type of deck that I don't want to. Right now, I am just using a basic, boring Kaiba-dragon beatdown deck that is juiced up with a lot of ultra and super rare spell/trap cards. My new deck cannot be a reality just yet. I will admit that Mai sometimes ends up basically killing herself with chain master if she doesn't have a lot of other stuff at the same time.

I want to give an improvement to the Labyrinth Builder deck above. Amazoness Sage is a problem for the current build for two reasons: if you use Shard of Greed, she will attack your Labyrinth Wall, costing you the effect damage only bonus, and the final 10k damage combo has too many cards you need to keep until the final turn (2x union attack, 2x thunder dragon, secret pass, shield and sword, gk vassel, and that's 7) so you either have to set a card which Amazoness sage will destroy or finish the farm early costing you the no cards left bonus.
This version is also 8k base without glossy or prismatic bonuses because of the tribute summon. In this version, you want to search for vassal early with recruiter and wonder wand and then discard it when your hand is full or use it with wonder wand to get it into the graveyard. On the last turn, tribute labyrinth wall for chief to bring back vassal, fusion (have fusion gate active ahead of time), secret pass, union, union, attack. That's only 6 cards needed that you can't discard instead of 7 (chief, 2x thunder dragon, secret pass, 2x union attack,
The double summon is just there since it can speed up the farm sometimes by using two wonder wands in one turn or you can use wonder wand and tribute for chief in the same turn.
Important things for either version to know: you can "toggle on" to use jar of greed or legacy of yata-garusu before amazoness sage can enter the battle phase, and Mai doesn't try to destroy fusion gate with amazoness sage.
