The best starting hand is a set of Cat's Ear Tribe and Riryoku Field. Basically Kaiba does not attack your Cat's Ear Tribe unless the battle position of the monster is Defense or your Life Points are less than the total battle damage his monsters can inflict during a turn.
If a copy of Cat Ear Tribe is not in your staring hand, receive 1800 or more points of battle damage. Then the "Draw Sense" skill allows you to draw the monster card. The skill counts battle damage even if you activate Enchanted Javelin. Use Supremacy Berry to regenerate your Life Points.
When your life points are 4000, he does not attack a Cat Ear Tribe.
When the amount of your life points are not enough, Kaiba attacks Cat Ear Tribe.
Kaiba uses Enemy Controller to switch the battle position of Cat Ear Tribe to defense.
When you have two copies of Cat Ear Tribe on the field, he try to take control of one of them using Enemy Controller. Once he successfully steel the monster, Kaiba get it to attack the other Cat Ear Tribe to destroy each other.
Other useful skills
[Restart] Can be used after starting hand is distributed. Shuffle all the cards from your hand into the Deck. Then draw the starting hand again.
Performing both Tribute and Ritual summon gives you 700 score in total. If you have already unlocked Pegasus, use Relinquished to perform ritual summon. For tribute summon, Shadow Ghoul is ok since it is very easy to get.
Finish with Shadow Ghoul's over 3000 damage
Shadow Ghoul gain 100 ATK for each monster in your graveyard. Use Sword of Dark Destruction, Reinforcements and other ATK boost to increase the ATK of the monster over 3,000, then attack Kaiba's Life Points directly with the monster.
From my experience he actually not concern about your HP that much unless he could win that turn. It depends on cards he has that time, especially D.D.warrior which could remove our cat ear 100%. If he has another monster he will attack cat ear with D.D first but if not he will set D.D. instead. Enemy control is the same as always, using while he have more monsters than you or could possibly win that turn.
