Don't summon the gate guardian, pass the turns until you get some trap cards to protect them.
Ideally, you will want to set Dimension Gate, Riryoku Field, and Adhesion Trap Hole. This will protect you from most of Kaiba's cards.
Before reaching the last turn, it's recommended to make Kaiba use both his enemy controllers. If not, then you will have to set a riryoku field before your last turn, or use storm and hope that you get the right one.
Since Kaiba will most likely be able to get rid of one of your guardian on the field before you can protect them, it will give you a space to put a monster and get more draws, helping you get what you need faster
You can put more of this in the deck to make sure you get it earlier in the duel. This can protect you against his tributed monsters and also damages him, lowering his LP. When Kaiba's LP is low enough, you can banish any of your guardian to enable their effects again, which will prevent Kaiba from attacking you, unless he has enemy controller.
