How does this card work exactly. For example, I get that you need 3 monsters in the graveyard but what if I don't have space to summon all of them? Can I summon how many I want or the field needs to be completely empty to work?

no the field needs to be empty for this if it said up to 3 then you could do 1 or 2

Speed bird is actually better, because when speed bird is destroyed special summon 2 lvl 2 monster from graveyard.
