The only way that I found to counter Sylvans is to use Sphere Kuriboh. Sylvans can destroy everything on the field but they have nothing to destroy your hand traps. The only issue that I found with this is that you have to get lucky with your starting hand. I only have one Kuriboh and it is very difficult to have it show up in my starting hand.

I just hit KoG with Sylvan and some of the decks I found difficult to play against sometimes were: Pure Hazy Flames, Sea Stealth Attack, and Cyber Angels.
I had about a 35/65 against Hazies, 30/70 against SSA and a 55/45 against Cyber Angels. A cheaper rogue deck I found did well against my Sylvans was Psychics, actually. Aside from these of course there were opposing Sylvan decks, but I found I had a strong advantage in the mirror matchups, maybe just due to my familiarity with the deck. I wish you luck in beating the meta :)

not sure how well it would work but cards that negate effects like divine wrath, ultimate providence, and forbidden dress could potentially help slow down the excavating/milling. Forbidden graveyard lets you negate effects activating out of the GY during the turn you play it. Haven't played too much against sylvan but the ones I have only run a few spells and even then not much other than raging mad plants so Magic Jammer could solve that.

Simply remove the set monster before it getting flipped. Many cards can do that, for example, Dakini, Tribute to Doomed, SSA, Abyss Soldier, etc. Also, you can negate effects' activation. The big problem for Sylvan is that it will be at disadvantage if it cannot excavate cards because it often has no back row.
