After activating Magicians Unite on while 2 spellcasters are on the field, if I tribute the other one (without the 3000 atk), can I still attack with the one with 3000 atk?

Yes. You can activate the card with as many other Spellcasters as you like, and lose all the rest, but that 3k spellcaster remains with all its ATK.
