You need to survive the direct attack broski.

You can only activate The Golden Apples when you take damage from a direct attack. If you have no monsters on your field, your opponent can launch direct attacks on your Life Points. Some card effects also allow monsters to attack directly and ignore monsters in their way.

It only activates when you take a direct hit(no monster on your side of the field). After you take the hit(it doesn't work if you hit 0)you recover the lost LP and you gain a token.
