I saw that Yami Yugi, Seto Kaiba, Joey Wheeler, and Mai Valentine are characters that are playable ( Check the game's official website if you do not believe me). Which one will be the best? Can I switch an active character to others?

Yes. Tap on your character on the bottom right and then a selection of all the characters you have unlocked will appear. Tap on the one you want to play with then get to Dueling!
