Once you've purchased a game mat, it will no longer appear in the store as a "purchasable" option. I don't remember what happens, but the mat may show up in your Gift Box. If it does, just click/tap it to claim it.
Then, when you go to change a Deck's game mat, scroll to the very bottom of the list. Then scroll up a tiny bit, and you should see the Game Mat(s) you purchased from the store.
